The heat scale

Every jar carries a number. It describes how the jelly eats on a cracker, not the Scoville rating of the pepper that went in.

The scale starts at three. Nothing has ever been made below it, so a one and a two are not on offer here.

Heat moves a little between batches. Peppers from the same plant are not the same pepper twice, so treat the number as the batch's intent rather than a guarantee.

Past five: the ten-point scale

Once a batch tops out the five, the rating on that jar is given out of ten instead. Same tasting, longer ruler.
